Moroccan Couscous
Ingredients
1/3 cup cashews, roughly chopped
1 tsp curry powder
¼ tsp cinnamon
1 bay leaf
1 Tbsp Olive oil
¾ cup chopped onion
1 tsp garlic
¼ cup dried cranberries
1 cup whole wheat couscous
1 1/2 cup water or chicken broth
½ tsp salt
Cilantro (optional)

Toast the cashews ; set aside

When it reaches a boil, remove from heat and stir in the couscous. Cover and let sit for 5 minutes.
