I found some big and beautiful artichokes at the Little Italy Farmer's Market. Aren't these beautiful? Are you jealous? Well they tasted even better than they looked. I think the best way to serve them is with a side of garlic butter but you can use whatever it is you fancy!

To prepare artichokes, you can cut all the bottom stems off or leave a little on. They are edible but if you want your artichokes to sit flat and upright then cut them all off. Remove outer, tough leaves; discard.
Cut 1 inch off pointed tops of artichokes
Snip tips from remaining leaves with scissors.

Add water to pot filling it about 1/4 of the way; Bring to a boil. Drop the artichokes in so the bottom stems are at the top of the pot.Reduce heat to low. Cover; simmer 30 to 40 minutes until leaves pull easily from bases and artichoke bottoms are tender when pierced with fork.
