Blackened Salmon with Tomato Ginger Salsa
Blackened Seasoning
1tsp. garlic powder
1tsp. Garam Masala
1/2 tsp. dried ginger
1/2 tsp. dried thyme leaves
1/2 tsp. cayenne pepper
1/2 tsp. salt
Combine well and pat onto both sides of fish.
Heat a skillet over med. high heat until pan is hot. Cook fish on both sides until cooked through. Depending on thickness 2-5 per side! Serve with the tomato salsa!
Tomato Ginger Salsa
2 tomatoes seeded, chopped
1/4 cup thinly sliced green onions
1/4 cup finely chopped sweet onion
2 tablespoons finely chopped peeled fresh ginger
2 tablespoons rice vinegar
1 teaspoon sugar
1 teaspoon fish sauce
1/4 cup thinly sliced green onions

Combine all ingredients in a bowl and season with salt and pepper.
