white fish with roasted red pepper sauce

Here is another quick and easy recipe and it's so low in calories. It can't have more than 150 cal. per serving. Just think you can make up for it in dessert!


White Fish with Roasted Red Pepper Sauce


Ingredients

½ of a 12oz. jar roasted red peppers in water, drained
1 clove garlic, minced
2 teaspoons fresh basil chopped
1 Tablespoons tomato paste
1/2 Tablespoon red wine vinegar
1/4 teaspoon sugar
1/8 teaspoon salt
dash cayenne pepper
2 white fish fillets
garlic salt and pepper


Directions
Preheat oven to 400


For sauce, in a blender combine peppers and garlic; cover and blend until nearly smooth.


Add the basil, tomato paste, vinegar, sugar, salt, and cayenne pepper.



Cover; blend until mixture is smooth. You may want to add a little water if you want a thinner sauce.
Place fish is baking dish and season with garlic salt and pepper, bake 10 minutes.
While fish is cooking, heat sauce through in a small saucepan.

After the 10 minutes Add ½ sauce to top of the fish. Continue to cook another 10 minutes.

Remove, and serve with remaining sauce. Garnish with fresh basil if desired
